A water-bath will be limited to the volume of its container and will therefore be more cumbersome and less practical than an immersion circulator.<br \/>It is for this reason that we will focus here only on the immersion circulators also called sous vide cookers.<br \/>To choose a sous vide immersion circulator, you must first identify the origin of the immersion circulator on sale on the market. And for that it is interesting to know the &#8220;History&#8221; of this type of cooking appliance.<br \/>Then, in a second post, we will look precisely at certain objective criteria that will help you choose the perfect sous vide cooker for you.<\/p>\n<p>In the 1970s (the beginnings of the sous vide technique) sous vide cookers were mostly laboratory equipments. The manufacturers of these immersion circulators still exist. They are American (Polyscience), English (Grant Instruments, Nickel-Electro), German (Julabo, Lauda) and Spanish (Selecta).<\/p>\n<p>[\/et_pb_text][et_pb_gallery gallery_ids=&#8221;143,144,145,146&#8243; orientation=&#8221;portrait&#8221; show_title_and_caption=&#8221;off&#8221; show_pagination=&#8221;off&#8221; _builder_version=&#8221;4.18.0&#8243; _module_preset=&#8221;default&#8221; min_height=&#8221;223px&#8221; custom_padding=&#8221;||0px|||&#8221; global_colors_info=&#8221;{}&#8221;][\/et_pb_gallery][et_pb_text _builder_version=&#8221;4.18.0&#8243; _module_preset=&#8221;default&#8221; global_colors_info=&#8221;{}&#8221;]<\/p>\n<p>Immersion circulators that came out of these factories were clearly not made for use in the kitchen. They were heavy, could heat oils up to 200\u00b0C (while 95\u00b0C in sous vide cooking is the maximum), were not easy to use and above all at prices that were far too high for an individual or profi chef.<br \/>Until 2000 sous vide cooking was a cooking technique reserved for insiders, mainly used by starred chefs.<br \/>Some then had fun (myself included) connecting an industrial temperature controller to a rice cooker or a &#8220;Bubbler&#8221;. A Canadian guy had even specialized in the manufacture and sale of this equipment: the Sousvide Magic from Fresh Meals Solutions.<br \/>This company no longer exists.<\/p>\n<p>[\/et_pb_text][et_pb_image src=&#8221;https:\/\/sous-vide.info\/en\/wp-content\/uploads\/sites\/2\/2023\/03\/fresmeassolutions-sous-vide-info-magic-external-temperature-controler-en.jpg&#8221; alt=&#8221;Solution alternative \u00e0 un thermoplongeur ou bain-marie pour faire de la cuisson sous vide&#8221; title_text=&#8221;fresmeassolutions sous vide external temperature controler&#8221; align=&#8221;center&#8221; _builder_version=&#8221;4.18.0&#8243; _module_preset=&#8221;default&#8221; global_colors_info=&#8221;{}&#8221;][\/et_pb_image][et_pb_text _builder_version=&#8221;4.18.0&#8243; _module_preset=&#8221;default&#8221; global_colors_info=&#8221;{}&#8221;]<\/p>\n<p>Then came on the market, in 2009 (nearly 40 years after the beginnings of this technique), 2 new products that revolutionized and &#8220;launched the fashion&#8221; of sous vide cooking: the SousVide Supreme and the SWID.<\/p>\n<p>SousVide Supreme is a temperature controlled water-bath, without a stirring pump, marketed by Americans.<\/p>\n<p>[\/et_pb_text][et_pb_image src=&#8221;https:\/\/sous-vide.info\/en\/wp-content\/uploads\/sites\/2\/2023\/03\/sous-vide-supreme.jpg&#8221; title_text=&#8221;sous-vide-supreme&#8221; align=&#8221;center&#8221; _builder_version=&#8221;4.18.0&#8243; _module_preset=&#8221;default&#8221; width=&#8221;45%&#8221; global_colors_info=&#8221;{}&#8221;][\/et_pb_image][et_pb_text _builder_version=&#8221;4.18.0&#8243; _module_preset=&#8221;default&#8221; global_colors_info=&#8221;{}&#8221;]<\/p>\n<p>The SWID is an immersion circulator designed and manufactured in Germany.<br \/>These two sous vide cookers have made sous vide cooking technique accessible to individuals and professional cooks for a few hundred euros.<\/p>\n<p>[\/et_pb_text][et_pb_image src=&#8221;https:\/\/sous-vide.info\/en\/wp-content\/uploads\/sites\/2\/2023\/03\/swid-sous-vide-immersion-circulator-made-in-germany-addelice.jpg&#8221; alt=&#8221;The SWID is a professional sous vide immersion circulaor made in Germany&#8221; title_text=&#8221;swid-sous-vide-immersion-circulator-made-in-germany-addelice&#8221; align=&#8221;center&#8221; _builder_version=&#8221;4.18.0&#8243; _module_preset=&#8221;default&#8221; width=&#8221;45%&#8221; global_colors_info=&#8221;{}&#8221;][\/et_pb_image][et_pb_text _builder_version=&#8221;4.18.0&#8243; _module_preset=&#8221;default&#8221; global_colors_info=&#8221;{}&#8221;]<\/p>\n<p>In 2010, an American guy posted on his blog, &#8220;Seattle Food Geek&#8221;, <span style=\"color: #0000ff;\"><a href=\"https:\/\/seattlefoodgeek.com\/2010\/02\/diy-sous-vide-heating-immersion-circulator-for-about-75\/\" style=\"color: #0000ff;\">the plans for his home made immersion circulator<\/a>.<\/span> It is no more, no less than a temperature controller connected to several heater elements and a pump. It is a variant of the solution from the company Fresh Meals Solutions. The success on the internet was immediate. For $75 it was then possible to build your own immersion circulator (not without risk)!<\/p>\n<p>[\/et_pb_text][et_pb_image src=&#8221;https:\/\/sous-vide.info\/en\/wp-content\/uploads\/sites\/2\/2023\/03\/home-made-immersion-circulator.jpg&#8221; alt=&#8221;Home made sous vide immmersion circulator designed by %22Seattle Food Geek%22&#8243; title_text=&#8221;home-made-immersion-circulator&#8221; align=&#8221;center&#8221; _builder_version=&#8221;4.18.0&#8243; _module_preset=&#8221;default&#8221; global_colors_info=&#8221;{}&#8221;][\/et_pb_image][et_pb_text _builder_version=&#8221;4.18.0&#8243; _module_preset=&#8221;default&#8221; global_colors_info=&#8221;{}&#8221;]<\/p>\n<p>In 2012, young American entrepreneurs launched a crowdfunding campaign on Kickstarter and gave birth to <span style=\"color: #0000ff;\"><a href=\"https:\/\/www.kickstarter.com\/projects\/nomiku\/nomiku-bring-sous-vide-into-your-kitchen?ref=discovery&amp;term=sous%20vide\" style=\"color: #0000ff;\">NOMIKU<\/a>.<\/span><br \/>Subsequently, several other more or less successful projects will follow.<br \/><span style=\"color: #0000ff;\"><a href=\"https:\/\/www.kickstarter.com\/projects\/codlo\/codlo-a-powerful-compact-controller-for-sous-vide\/description\" style=\"color: #0000ff;\">Codlo<\/a><\/span> (2013), which proposes a fancy temperature controller but similar to Fresh Meals Solution&#8217;s idea.<br \/><span style=\"color: #0000ff;\"><a href=\"https:\/\/www.kickstarter.com\/projects\/seattlefoodgeek\/sansaire-sous-vide-circulator-for-199?ref=discovery&amp;term=sous%20vide\" style=\"color: #0000ff;\">SANSAIRE<\/a><\/span> (in 2014), an immersion circulator available for $200.<br \/><a href=\"https:\/\/www.kickstarter.com\/projects\/anova\/anova-precision-cooker-cook-sous-vide-with-your-ip?ref=discovery&amp;term=sous%20vide\"><span style=\"color: #0000ff;\">Anova<\/span><\/a> (2015), the first immersion circulator with wifi and bluetooth connection.<br \/><a href=\"https:\/\/www.kickstarter.com\/projects\/nise\/nise-wave-wifi-sous-vide-with-adaptive-temperature?ref=discovery&amp;term=sous%20vide\"><span style=\"color: #0000ff;\">Nise Wave<\/span><\/a> (2018), the first truely waterproof immersion circulator.<br \/><span style=\"color: #0000ff;\"><a href=\"https:\/\/www.kickstarter.com\/projects\/mellow-duo\/mellow-duo-perfect-sous-vide-meals-with-a-press-of-a-button\" style=\"color: #0000ff;\">Mellow<\/a><\/span> (2019) the first water-bath that cooks at low temperature but can also keep products cool&#8230;<\/p>\n<p>[\/et_pb_text][et_pb_gallery gallery_ids=&#8221;147,148,149,150&#8243; orientation=&#8221;portrait&#8221; show_title_and_caption=&#8221;off&#8221; show_pagination=&#8221;off&#8221; _builder_version=&#8221;4.18.0&#8243; _module_preset=&#8221;default&#8221; min_height=&#8221;223px&#8221; custom_padding=&#8221;||0px|||&#8221; global_colors_info=&#8221;{}&#8221;][\/et_pb_gallery][et_pb_text _builder_version=&#8221;4.18.0&#8243; _module_preset=&#8221;default&#8221; global_colors_info=&#8221;{}&#8221;]<\/p>\n<p>In the years that followed, all of these companies went bankrupt except for SousVide Supreme, SWID and Anova.<br \/>Note the huge failure of the &#8220;Nespresso&#8221; of sous vide cookers, the &#8220;Chef Cuisine&#8221; (2015) with the partnership of Anne Sophie Pic.<\/p>\n<p>[\/et_pb_text][et_pb_image src=&#8221;https:\/\/sous-vide.info\/en\/wp-content\/uploads\/sites\/2\/2023\/03\/chef-cuisine-sous-vide.jpg&#8221; title_text=&#8221;chef-cuisine-sous-vide&#8221; align=&#8221;center&#8221; force_fullwidth=&#8221;on&#8221; _builder_version=&#8221;4.18.0&#8243; _module_preset=&#8221;default&#8221; global_colors_info=&#8221;{}&#8221;][\/et_pb_image][et_pb_text _builder_version=&#8221;4.18.0&#8243; _module_preset=&#8221;default&#8221; global_colors_info=&#8221;{}&#8221;]<\/p>\n<p>At the same time, manufacturers of laboratory equipments are adapting to the market and (slightly) modifying their immersion circulators to make them more attractive in the kitchen. Julabo becomes FUSION CHEF PEARL, Polyscience launches the CREATIVE SERIES&#8230;or sell their equipment under other brands (Nickel-elektro becomes Clifton Range)&#8230;<\/p>\n<p>At the same time our Chinese friends, sensing a good deal, produce immersion circulators strongly inspired by their American and European counterparts. They are flooding the market with devices at rock bottom prices.<\/p>\n<p>And here we are today, in 2022!<br \/>To summarize the situation, there are therefore 3 types of immersion circulator manufacturers:<\/p>\n<h4>1. &#8220;Historical&#8221; manufacturers of laboratory immersion circulators<\/h4>\n<p>&#8211; <span style=\"color: #0000ff;\"><a href=\"https:\/\/www.polyscience.com\/products\/circulating-baths\/heated-circulators\/integrated-heated-baths\" style=\"color: #0000ff;\">Polyscience<\/a>:<\/span> Distributed by <a href=\"https:\/\/polyscienceculinary.com\/collections\/sous-vide-circulators\"><span style=\"color: #0000ff;\">Breville<\/span><\/a>, the Polyscience brand is popular with Americans but is not well represented on the European market. These products are intended for professionals or individuals.<br \/>&#8211; <span style=\"color: #0000ff;\"><a href=\"https:\/\/grantinstruments.com\/scientific\/water-baths\/heated-circulating-baths\" style=\"color: #0000ff;\">Grant<\/a><\/span> and <a href=\"https:\/\/www.cliftonfoodrange.co.uk\/\"><span style=\"color: #0000ff;\">Clifton Range<\/span><\/a> (Nickel-Electro) are UK brands with little presence on the European market. Their products are exclusively for professionals.<br \/>&#8211; <span style=\"color: #0000ff;\"><a href=\"https:\/\/www.julabo.com\/fr\/produits\/thermostats-chauffants\/thermostats-immersion\" style=\"color: #0000ff;\">Julabo<\/a><\/span> (Germany): now <span style=\"color: #0000ff;\"><a href=\"https:\/\/www.fusionchef.de\/fr\" style=\"color: #0000ff;\">&#8220;Fusion Chef&#8221;<\/a><\/span> is a brand recognized by chefs all over the world. Julabo products are exclusively targeted for professionals.<br \/>&#8211; <a href=\"https:\/\/www.lauda.de\/fr\/appareils-de-thermoregulation\/thermostats\/thermostats-chauffants\/alpha-1\/product\/Alpha-A\"><span style=\"color: #0000ff;\">Lauda<\/span><\/a> (Germany): brand little represented in the world of sous vide. Lauda products are made for professionals.<br \/>&#8211; <span style=\"color: #0000ff;\"><a href=\"https:\/\/grupo-selecta.com\/equipos-laboratorio\/termostatos-ultratermostatos-inmersion\/\" style=\"color: #0000ff;\">Selecta<\/a><\/span> (Spain): brand better known as &#8220;Roner&#8221; which is distributed by <span style=\"color: #0000ff;\"><a href=\"https:\/\/cookingconcepts.com\/es\/categoria-producto\/maquinaria\/roner\/\" style=\"color: #0000ff;\">ICC Cooking Concepts<\/a>.<\/span><\/p>\n<h4>2. Manufacturers of &#8220;second generation&#8221; immersion circulators (not laboratory equipment), listed in chronological order<\/h4>\n<p>&#8211; <span style=\"color: #0000ff;\"><a href=\"https:\/\/sousvideconsulting.com\/swid-classic-1800w\" style=\"color: #0000ff;\">SWID<\/a><\/span> (designed and manufactured in Germany by Addelice then <span style=\"color: #0000ff;\"><a href=\"https:\/\/sousvideconsulting.com\" style=\"color: #0000ff;\">Sous Vide Consulting<\/a><\/span>): brand well represented in Europe. Products are intended primarily for professionals but also accessible to individuals.<br \/>&#8211; <span style=\"color: #0000ff;\"><a href=\"https:\/\/anovaculinary.com\/\" style=\"color: #0000ff;\">Anova<\/a><\/span> (American brand part of the Electrolux Group): products made in China, mainly intended for individuals.<br \/>&#8211; <a href=\"https:\/\/www.chefsteps.com\/joule\"><span style=\"color: #0000ff;\">Joule<\/span><\/a> (ChefSteps): American products made in China for individuals, also distributed by Breville. Very little represented in Europe.<br \/>&#8211; <a href=\"https:\/\/www.sammic.fr\/search?query=thermoplongeur\"><span style=\"color: #0000ff;\">SmartVide<\/span><\/a> (Spanish brand, Sammic): products for professionals.<\/p>\n<p>With a few rare exceptions, all brands of immersion circlators other than those mentioned above are generally products designed and manufactured in China.<\/p>\n<h4>3. &#8220;3rd generation&#8221; immersion circulators designed and manufactured in China (listed in 2022)<\/h4>\n<p>&#8211; BUFFALO, STEBA, ALLPAX, STALGAST, VACMASTER&#8230;you will find this immersion heater absolutely everywhere (ebay, amazon, professional equipment online store) under many different brands. For example, a recent &#8220;Kickstarter&#8221; product is a more &#8220;at risk&#8221; device in terms of breakdown and after-sales service than an immersion circulator from a manufacturer such as Julabo, Polyscience or Addelice\/Sous Vide Consulting.<br \/>As for first-price Chinese immersion circulators&#8230;as my grandmother used to say &#8220;when you buy cheap and of poor quality, you buy several times!&#8221;.<br \/>Other criteria than the origin of a sous vide cooker should be reviewed by you. They will help you in your choice of the immersion circulator best suited to your needs.
